Chewy Protein Bars

These plant powered protein bars made ahead are a perfect option for a snack on the go!

Ingredients
  

  • 1 cup red lentils
  • 2 cups water
  • 3 1/4 cups rolled oats
  • 3/4 cup flour use GL for gluten sensitivity
  • 1/4 cup ground chia seeds
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • 2/3 cup cocoa nibs
  • 3/4 cups chopped almonds
  • 1/4 cups unsweetened coconut
  • 2/3 cup nut butter ,./

  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup apple sauce

Instructions
 

  • Preheat Oven to 350F
  • Combine water & lentils in a saucepan & bring to a boil. Reduce to simmer uncovered for 20-25 mins.
  • Drain any excess liquid, set aside to cool. Combine oats, flour, chia, coconut, almonds, cinnamon & salt in a large mixing bowl & blend.
  • In a separate large bowl combine lentils, almond butter, maple syrup, honey & vanilla. Use a wooden spoon to mix together. Combine wet & dry ingredients. Add chocolate chips, lightly stir until blended & mix well. Pour mixture into a 9″ x 13″ baking sheet & bake 25 mins. Let cool and cut into bars.
